If you want to feel super nourished, eat veggies with breakfast! I love adding veggies to egg scrambles and omelettes, but it can be tough to incorporate veggies into a sweet breakfast. Zucchini plays into a warm bowl of spiced oats so well!
This time of the year, zucchini are abundant and I'm always looking for ways to use them up. For this recipe, you can process them instead of going through the hassle to grate them. Keep "grated" zucchini in the fridge ready to be thrown into your oats. Don't worry about the excess liquid. The oats will soak it all up.
This recipe uses quick cooking oats because they expand much better than regular. You can either buy them or make them by pulsing rolled oats in the food processor until they are broken down, but not a powder.
Not only is this bowl of oats BIG, but it's also filling. Egg whites give these oats more protein to keep you satisfied until your next meal.

Big Bowl Zucchini Spice Oatmeal
Single serve.
Ingredients:
1/2 cup quick cooking oats
1 1/2 cup water
1/4 cup egg whites
1/4 tsp glucomannan powder
1/2-1 tsp cinnamon
1/8 tsp ginger
1/8 tsp nutmeg
1/8 tsp mineral salt
4-6 doonks stevia (a doonk is 1/32 tsp)
1 cup grated zucchini
~10 raisins
Directions:
Combine the oats and water in a LARGE bowl. Microwave for 3 minutes.
Stir in the egg whites, gluccomannan, spices, salt, and stevia. Stir in the zucchini and raisins last.
Microwave the oatmeal for 2 minutes. When the oats are done cooking, stir, slightly cool, and enjoy!
