Asian Peach Chopped Chicken Salad (Sugar-free, Low-fat, Dairy-free, THM:E, Paleo)
It's peach season! Although I do love a good peach cobbler, this salad is another delicious way to use up your ripe peaches. On hot summer days, all I crave is refreshing food. This salad is just that: refreshing, light, but still satisfying.
Fruit is one of my favorite additions to salads. The sweet bite of peach rounds out all of the Asian flavors. Trust me, it just works. Avocado would be a delicious addition to this salad, too, and that would make it a delicious "crossover" on THM.
This is a single serve recipe but it can easily be multiplied to feed several people.

Asian Peach Chopped Chicken Salad
Single serve.
Ingredients:
2 cups of spinach, chopped
2 cups coleslaw mix or chopped cabbage
1 handful of grape tomatoes, cut into quarters
1 mini cucumber, diced
3 green onions, diced
1 peach, diced
1/2 cup cooked, cubed chicken
salt and pepper
For the dressing:
1 TBSP peanut flour
1 TBSP water
1 TBSP lime juice
1 tsp MCT oil
1 tsp liquid aminos
1/8 tsp ginger
pinch of red pepper flakes
2 doonks of stevia (a doonk is 1/32 tsp)
Directions:
Combine the salad ingredients in a large bowl. Season with salt and pepper to taste.
Mix together the dressing ingredients. Pour the dressing over the salad and use a serrated knife and fork to chop and mix the salad in the bowl.
Serve and enjoy!
