Savory Oatmeal Bake (Low-fat, Dairy-free, THM:E)


I'll just say it: It tastes like stuffing. I don't usually like to compare my dishes to traditional dishes because I want them to stand on their own as delicious. However, I took one bite of this oatmeal bake immediately felt like I was eating a thanksgiving dish. This oatmeal bake is creamy and hearty, but is actually nourishing. I have to admit that it is one of my all-time favorite dishes I have ever created.

If you're scared of savory oats, DON'T BE! Oats can take on a completely different form when baked with savory spices. Even my younger sister, who doesn't care for oatmeal, loves this recipe. I can almost guarantee you that if you like stuffing, you'll like this recipe and it'll become a staple in your home.

There aren't any set rules for this dish. I've made it for breakfast with fresh fruit as a fun change-up, but I can see this dish being served on the side of baked chicken with a green salad for dinner. For an easy dinner that doesn't require sides, mix in cooked, cubed chicken breasts before baking. This recipe makes 4 servings, it can easily be doubled and baked in a 9x13in. baking dish for a crowd or to feed a large family.

Savory Oatmeal Bake

Makes 4 servings.

Ingredients:

1/2 TBSP coconut oil

1 TBSP minced garlic

8 oz. sliced mushrooms

4 cups spinach

1/2 yellow onion, chopped

salt and pepper

2 cups rolled oats (I used 1/2 cup quick cooking and 1 1/2 cups regular but this is optional.)

1 tsp mineral salt

1 tsp dried thyme

1 tsp dried rosemary

1 tsp onion powder

1/2 tsp black pepper

1/2 tsp baking powder

2 doonks stevia (1/16 tsp in all)

1 cup water

1 cup egg whites

Directions:

  1. Melt the coconut oil in a large pan over medium heat. Add the garlic, mushrooms, spinach, onion, and lightly season with salt and pepper. Let the veggies saute until they are tender.

  2. Preheat the oven to 350 degrees. In a large mixing bowl, combine the dry ingredients. Add in the water and egg whites and stir to combine.

  3. Once the veggies are soft, mix them into the oat mixture. Pour into a greased 11x7in. baking dish and bake for 15 minutes.

  4. Serve and enjoy!
