Super Fuel Crunch Salad (Low-carb, Dairy-free, THM:S, Keto, Paleo)

This salad changed. my. life. One day recently, I decided to find a way to fuel my body with loads of veggies without having to take one mouthful of dry spinach. This chopped salad was born. I now eat this almost every single day because I find that I crave it. The flavors and textures work together wonderfully. It is a fairly light salad, but you wouldn't know by eating it. I typically have a huge appetite, but even I find that this fills me up and leaves me satiated! It's important to chop all of the veggies in this salad super small, no bigger than the size of a thumbnail. The best salad is achieved when you're able to get a little bit of every flavor in each bite!

I have linked some of the ingredients that I own down below. They are tried and true products and are the best value and quality that I have found.

 

Super Fuel Crunch Salad

Makes 1 serving.

Salad Ingredients:

3 cups of spinach, finely chopped

1 cup of coleslaw mix or finely chopped cabbage

3 stalks of celery, finely chopped

1 handful of broccoli florets, finely chopped

1 handful of grape tomatoes, sliced in half

1/4 cup chopped red onion

1/2 cup chopped cilantro

1/2 avocado, cut into cubes

1 serving of tuna or chicken or salmon or boiled eggs

salt and pepper

Dressing Ingredients:

1 TBSP apple cider vinegar

1 TBSP spicy brown mustard or yellow mustard or dijon mustard

1 TBSP water (if using the avocado) or 1/2 TBSP MCT oil (if not using the avocado)

1 doonk of stevia (1/32 tsp)

Directions:

  1. Combine the spinach, cabbage, celery, broccoli, tomatoes, red onion, cilantro, avocado, and protein of choice in a large mixing bowl.

  2. Mix together the dressing. Pour it over the salad.

  3. Using a serrated knife and a fork, chop the salad in the bowl until it is mixed thoroughly and the dressing is distributed throughout the salad.

  4. Sprinkle on the flax seed and nutritional yeast. Gently mix to combine, but do not overmix. Pour into a large serving bowl or enjoy out of the mixing bowl!
